There isn't a way you can use to add custom fonts to the application. You will need to use the built-in ones. However, try adding new fonts to Windows (Start > Run > type fonts and press Enter) then restart the application and check if you can select newly installed fonts.
I have a 5 year old computer with Windows XP as operating system and the software works without issues. My concern is that if I have to purchase a newer computer with a newer operating system, will I be able to use my existing Stitch Pro?

No, Stitch 2000 Pro is compatible only with Windows XP and below operating systems. If you purchase a new computer with a newer platform, you will need to upgrade the software also.
